Pear Brie Caramel Appetizer – Erin Donohoe
1 French baguette, no more than 2” wide, cut into 1/4” strips
8 oz. Brie
¼ C walnuts, finely chopped in food processor
¼ C dried cranberries, finely chopped
2 Red d’Anjou pears, small dice
1 jar caramel sauce
Sweet basil, for garnish
1.Preheat oven to 400 degrees. Arrange bread slices on a baking sheet and toast in the oven, about 5 to 7 minutes, until light golden brown. Cool.
2.Place brie in oven save dish and put in oven to soften, about 7-10 minutes.
3.Meanwhile, warm the caramel in a small sauce pan over medium-low heat, until easy to drizzle.
4.Mix chopped walnuts and dried cranberries in with brie.
5.Spread ½ to 1 tablespoon of cheese mixture onto bread. Drizzle with caramel
