Pork with Risotto

Pork with Risotto – Mike Amon

1/4 onion – small dice
2 cloves garlic – minced
1/2 cup Arborio Rice
1 cup chicken stock
2 carrots
1 parsnip
4 oz of Becky’s Blissful Bakery Caramel Sauce
1 oz Balsamic vinegar
2 cups water
dash of salt and pepper

1. Roast carrots and parsnips – 375 for 30 minutes. Small dice when finished.
2. Caramelize onion and garlic. Add Arborio rice, do not brown.
3. Add stock 1/4 cup at a time to rice.
4. Repeat step 3 until stock is gone.
5. Add Caramel sauce, parsnips, carrot and water.
6. Add Balsamic Vinegar.

 

Caramel Maple cream sauce
1/4 onion small dice
2 cloves garlic -minced
4 oz Heavy cream
4 oz Becky’s Blissful Bakery Caramel Sauce
1 oz Maple syrup
3 leaves of Rosemary

1. Caramelize onion and garlic.
2. Add cream. Let simmer for 5 minutes and then strain.
3. Add caramel sauce, maple syrup and chopped rosemary to the cream.
Grilled Pork Tenderloin
1 oz oil
dash salt & pepper
1 Pork Tenderloin

1. Season pork with oil, salt and pepper
2. Cook pork until medium
